Abstract
Biji buah salak merupakan salah satu limbah yang didapatkan dari tanaman salak yang jarang dimanfaatkan. Pada biji buah salak terdapat kandungan glukomanan yang dapat digunakan dalam pembuatan edible film dan edible coating. Tomat merupakan salah satu buah yang mudah mengalami kerusakan secara fisiologis maupun mikrobiologis sehingga pengaplikasian edible coating dari ekstrak etanol biji salak dapat mengurangi risiko kerusakan pada buah tomat. Tujuan dari penelitian ini yaitu untuk mengetahui rasio tepung biji salak dan pelarut (1:10, 2:10, 3:10) dan jenis plasticizer (sorbitol dan gliserol) sebagai bahan pembuatan edible coating terhadap pengaruh fisik dan mekanik edible film. Formulasi terbaik akan digunakan dalam pembuatan edible coating yang diaplikasikan pada tomat. Pada penelitian ini, formulasi terbaik yang terpilih yaitu rasio tepung biji salak dan pelarut 3:10 dengan menggunakan sorbitol sebagai plasticizer yang menghasilkan nilai kuat tarik sebesar 0,135±0,02 N/cm2, laju transmisi uap air sebesar 0,4±0,06, dan ketebalan sebesar 0,153±0,01 mm. Buah tomat yang dilapisi edible coating disimpan selama 9 hari dan diamati pada hari ke-0, 3, 6, dan 9. Pada penelitian ini, perlakuan edible coating berbahan dasar ekstrak etanol biji buah salak mempengaruhi susut bobot, kekerasan, pH, serta total mikroba dari buah tomat. / Snake fruit seeds are one of forms of waste from the snake fruit plant that are often left unused even though they have a substance called glucomannan, which can be used to produce edible film and edible coating. Tomatoes are one of the fruits that are prone to physiological and microbiological deterioration so the application of edible coating produced from the ethanolic extract of snake fruit seed can lower the risk of tomato deterioration. This study aims to find out the effect of ratio of snake fruit seed flour and solvent (1:10, 2:10, 3:10) and plasticizer (sorbitol and glycerol) as edible coating ingredients to the physical and mechanical attributes of edible film. The best formula will be used in the production of edible coating applied to tomatoes. It had been determined that the best formula for edible coating is ratio 3:10 of snake fruit seed flour and solvent with sorbitol as plasticizer. This formulation produces tensile strength 0,135±0,02 N/cm2, water vapour transmission rate 0,4±0,06, and film thickness 0,153±0,01 mm. The tomato which has been coated with edible coating is kept for nine days and is observed on day zero, day three, day six, and day nine. In this study, the use of edible coating with the ethanolic extract of snake fruit seed affects the mass, hardness, pH, as well as the total number of microbes of tomato.
